Ice Cream Base

Preparation

  • In a bowl, combine the chopped strawberries and balsamic vinegar. Allow them to sit for about 15 to 20 minutes to macerate.
  • Add the sugar to the strawberry mixture, stirring gently until fully dissolved.
  • Using a blender or food processor, puree the mixture until completely smooth.
  • In a separate bowl, prepare your ice cream base by mixing heavy cream, milk, and some additional sugar. Whisk together until well combined and smooth.
  • Combine the strawberry balsamic mixture with your ice cream base and stir gently.
  • Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions.
  • Once churned, transfer the ice cream to a container and freeze until firm, about 4 hours.

Notes

Use ripe strawberries for maximum sweetness. Adjust sugar levels based on preference and the sweetness of the strawberries. Can be served with a drizzle of extra balsamic reduction on top for a stunning finish.
