Cooking

  • In a heavy saucepan, combine sugar, corn syrup, salt, and water. Stir over medium-high heat until it begins to boil and reaches 300°F (150°C) on a candy thermometer.
  • After reaching 300°F, quickly remove the pan from the heat. Stir in the baking soda and butter until thoroughly mixed.
  • Add the chopped walnuts, banana chips, and vanilla extract, ensuring everything is well coated.
  • Immediately pour the mixture onto the warm cookie sheet and quickly spread it into an even layer.

Cooling and Storing

  • Allow the brittle to cool completely before breaking it into pieces.
  • Store in an airtight container at room temperature.
