Ingredients
  

For the beef and sauce

  • 2 lbs beef chuck roast Known for its juicy and tender qualities
  • 3 pieces dried guajillo chiles Adds color and mild heat
  • 2 pieces dried ancho chiles Provides a slightly sweet and rich flavor
  • 1 piece chipotle pepper in adobo sauce For smoky kick
  • 4 cloves garlic Minced, for aroma
  • 1 piece onion Quartered, for depth of flavor
  • 1 tsp cumin Delivers earthy flavor
  • 1 tsp oregano Adds brightness
  • 1/2 tsp ground cinnamon Provides warmth and sweetness
  • 4 cups beef broth Creates a luscious base
  • 2 tbsp apple cider vinegar Balances flavors
  • Salt and pepper To taste

For the tacos

  • 12 pieces small corn tortillas Soft and pliable
  • 1 cup shredded mozzarella or Oaxaca cheese For gooey richness
  • Fresh cilantro Chopped, for garnish
  • Lime wedges For serving

Instructions
 

Preparation

  • Start by removing the stems and seeds from the dried chiles.
  • Toast the chiles in a dry skillet over medium heat for 1-2 minutes until fragrant.
  • Transfer them to a bowl and cover with hot water for 10 minutes.
  • Blend the soaked chiles with chipotle pepper, garlic, onion, cumin, oregano, cinnamon, and beef broth until smooth.

Cooking the beef

  • Season the beef chuck roast generously with salt and pepper.
  • Place it in a slow cooker and pour the prepared sauce over it.
  • Add the apple cider vinegar and enough beef broth to cover the meat completely.
  • Cook on low for 6-8 hours, or until the beef is tender and easily shredded.

Shredding the beef

  • Once cooked, remove the beef from the slow cooker.
  • Using two forks, shred the beef into bite-sized pieces.
  • Reserve the cooking liquid for dipping later.

Assembling the tacos

  • Heat a skillet or griddle over medium heat and warm the corn tortillas on both sides.
  • Add a portion of shredded beef and cheese to the center of each tortilla.
  • Fold the tortillas in half and cook until crispy and golden on both sides.
  • Serve garnished with fresh cilantro and lime wedges on the side.

Notes

Let the cooked beef rest before shredding for optimal tenderness. Add toppings like onions, salsa, or avocado. For heat, increase chipotle or add chili powder.
