  • 2 tablespoons cornstarch Thickens the blackberry filling.
  • 1/4 cup water
  • 1 tablespoon lemon juice Adds brightness to the flavors.
  • 1 teaspoon lemon zest Enhances the citrus flavor.

Preparation of Crust

  • In a mixing bowl, combine the all-purpose flour, powdered sugar, and cold, cubed butter. Mix until the texture resembles coarse crumbs.
  • Add the egg yolk, vanilla extract, and cold water to form a dough. Wrap the dough in plastic wrap and refrigerate for 30 minutes.

Preparation of Filling

  • In a medium saucepan over medium heat, whisk together granulated sugar, cornstarch, water, lemon juice, and lemon zest. Stir continuously until thickened and bubbly, about 5 minutes.
  • Gently fold in blackberries and allow their juices to blend into the filling.

Assembly and Baking

  • Preheat the oven to 375°F (190°C).
  • On a floured surface, roll out chilled dough to about 1/8 inch thick. Cut out circles and press into tartlet pans.
  • Spoon the blackberry filling into each tartlet shell generously.
  • Bake for 18 to 20 minutes, or until the crusts are golden brown and filling is bubbly. Cool in the pans for a few minutes before transferring to a wire rack.

Serving

  • Garnish with fresh mint or powdered sugar. Serve at room temperature or chilled.

Notes

To ensure a flaky crust, handle the dough minimally and keep the ingredients cold. Consider adding cinnamon to the filling for extra flavor or drizzling honey over the tartlets before serving.
