Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease a baking dish.
  • In a large mixing bowl, whisk together the cottage cheese, eggs, honey, and vanilla until smooth.
  • In another bowl, combine the almond flour, baking powder, cinnamon, and salt.
  • Gently mix the dry ingredients into the wet ingredients until just combined.
  • Fold in the blueberries gently to keep them whole.
  • Pour the mixture into the prepared baking dish and spread evenly.

Baking

  • Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and a toothpick comes out clean.
  • Let cool slightly before slicing and serving.

Notes

For added texture, consider adding nuts or seeds. Can substitute honey with agave syrup for a vegan option.
