Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a small saucepan, combine blueberries, granulated sugar, and lemon juice. Cook over medium heat until the blueberries burst and the mixture thickens, about 10 minutes. Let it cool.
  • In a medium bowl, whisk together flour, baking powder, and salt.
  • In a large bowl, beat the softened butter and powdered sugar until light and fluffy. Add the egg, vanilla extract, and lemon zest, mixing until well combined.
  • Gradually add the flour mixture to the butter mixture, mixing until just combined.

Baking
