Ingredients
  

For the Sauce

  • 1 cup chicken broth For the creamy sauce
  • 2 tsp hot sauce
  • 1 tbsp honey
  • 3 tbsp flour Divided into portions
  • 1 pinch red pepper flakes
  • 3 tbsp lime juice
  • 3 tbsp butter For the sauce
  • 1 cup cheddar jack cheese, shredded For topping

For the Chicken

  • 2 large boneless, skinless chicken breasts Sliced and pounded
  • 12 tbsp olive oil or avocado oil For cooking
  • 1 tsp Cajun seasoning For seasoning the chicken
  • 1 tsp mustard powder
  • 1 tsp brown sugar Light preferred
  • 1 pinch cayenne pepper
  • 1 tsp oregano
  • 3 cloves garlic, minced
  • 10 oz Rotel diced tomatoes with green chilies Juice reserved for deglazing

For Garnish

  • 1 lime wedges For serving
  • 1 fresh cilantro For garnish

Prep Work

  • Reserve the juice from the Rotel tomatoes for deglazing later. In a measuring cup, combine honey, hot sauce, mustard powder, chicken broth, brown sugar, Cajun seasoning, red pepper flakes, cayenne pepper, and oregano. Mix well and set this sauce aside.

Prepare the Chicken

  • Slice the chicken breasts lengthwise to create thinner pieces. Use a meat mallet to pound them to about 1/2-inch thickness. Season both sides with 1 teaspoon of Cajun seasoning and coat each piece of chicken with flour.

Cook the Chicken

  • Heat the oil in a skillet over medium-high heat. Once hot, sear the chicken pieces for about 4-5 minutes on each side until they are golden brown. Remove the chicken from the skillet and set it aside.

Make the Sauce

  • In the same skillet, pour in the reserved tomato juice and deglaze by scraping up any browned bits stuck to the bottom. Add the butter and minced garlic, cooking for about 1 minute. Sprinkle in 3 tablespoons of flour and cook for 2 minutes, stirring continuously. Gradually whisk in the sauce mixture until smooth and creamy.

Simmer the Sauce

  • Bring the sauce to a gentle boil, then reduce the heat. Stir in the drained Rotel tomatoes and allow the mixture to simmer for 5-7 minutes, until it thickens.

Finish the Dish

  • Add the shredded cheddar jack cheese and lime juice to the sauce, stirring until everything is completely melted and well combined. Return the seared chicken to the skillet, spooning the sauce generously over the top. Let it simmer uncovered for an additional 4 minutes.

Serve

  • Garnish your Cajun Chicken Delight with lime wedges and fresh cilantro. Serve with rice, beans, or a salad.

Notes

Let the chicken rest after cooking to retain juices. For a thicker sauce, add more flour gradually but whisk continuously to avoid lumps. Letting the dish sit before serving allows flavors to meld beautifully.
