  • 1/2 cup cottage cheese or ricotta Adds a creamy depth to the casserole.

  • 1 piece chopped red bell pepper Adds sweetness and a vibrant hue.
  • 1 tablespoon ground cumin Introduces warm earthiness.
  • 1 teaspoon chili powder Adds gentle kick and depth.
  • 1 tablespoon vegetable oil Essential for sautéing the vegetables.
  • 6 pieces corn tortillas, cut into small pieces Form the crispy foundation.

Instructions
 

Preparation

  • Preheat the oven to 180°C (350°F).
  • In a large skillet, heat 1 tablespoon of vegetable oil over medium heat.
  • Add the chopped red onion and bell pepper to the skillet, cooking them until they are tender, around 5 minutes.
  • Once the vegetables are softened, pour in the 2 cups of tomato sauce, followed by the ground cumin and chili powder. Stir well and bring the mixture to a gentle boil. Let it simmer for about 5 minutes.
  • Season the sauce with salt and pepper to taste.
  • In a medium baking dish, lay a layer of the cut corn tortillas at the bottom.
  • Pour half of the tomato sauce mixture over the tortillas, spreading it evenly. Then, sprinkle half of the shredded cheddar cheese and half of the cottage cheese (or ricotta) over the sauce.
  • Create 8 small wells in the sauce layer and carefully crack an egg into each well.
  • Pour the remaining tomato sauce over the eggs and cheese, topping it off with the remaining cheese.
  • Place the casserole in the preheated oven and bake for 15-20 minutes.
  • Once done, remove the casserole from the oven and sprinkle with fresh cilantro if using.

Notes

For an added twist of flavor, consider adding diced jalapeños or jalapeño powder to the sauce. Experiment with different types of cheeses for variations. You can prepare the casserole up to the baking step the night before.
