  • 1 tbsp olive oil For sautéing vegetables.

  • to taste none salt & pepper Essential seasonings.
  • 1 cup shredded provolone or mozzarella cheese Creamy cheese ties everything together.

Instructions
 

Preparation

  • In a skillet over medium heat, add olive oil and cook onions and peppers until soft and caramelized, about 6–8 minutes.
  • Add shredded chicken to the skillet along with garlic powder, smoked paprika, salt, and pepper. Stir until heated through.
  • Load the chicken and veggie mix into toasted rolls. Top generously with shredded cheese and broil for 2–3 minutes until cheese is melted and golden.
  • Sprinkle with fresh parsley and serve hot.

Notes

For an extra kick, consider adding jalapeños or mushrooms, or slather some garlic mayo spread on the rolls before loading them up. Use leftover rotisserie chicken for even faster prep.
