Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C).
  • In a large bowl, combine the cauliflower florets with olive oil, minced garlic, onion powder, paprika, salt, and pepper. Toss until the cauliflower is evenly coated.

Roasting

  • Spread the cauliflower mixture in a single layer on a baking sheet.
  • Roast in the preheated oven for about 20-25 minutes, or until the cauliflower is tender and slightly golden.
  • Remove the baking sheet from the oven and sprinkle the shredded mozzarella and grated Parmesan cheese evenly over the roasted cauliflower.
  • Return to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
  • Once done, remove from the oven and let it cool slightly to allow the cheese to set.

Serving

  • Garnish with chopped fresh parsley before serving.

Notes

Use freshly shredded mozzarella for the best melt. Avoid overcrowding the baking sheet for crispy results. Store leftovers in an airtight container in the fridge for up to 3 days.
