Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • In a large mixing bowl, combine the white cake mix, Dr. Pepper soda, vegetable oil, eggs, and vanilla extract. Beat on medium speed until smooth. Gently fold in the chopped maraschino cherries.
  • Divide the batter evenly between the prepared cake pans and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool in the pans for 10 minutes before transferring to a wire rack.

Frosting

  • In a clean mixing bowl, beat the softened butter until creamy. Gradually add the powdered sugar, beating until well incorporated.
  • Pour in the Dr. Pepper soda and vanilla extract, beating until smooth and fluffy. Fold in the finely chopped maraschino cherries.

Assembly

  • Place one cake layer on a serving plate, spread frosting generously over the top. Add the second layer and lavishly frost the top and sides.
  • Decorate as desired.

Notes

Ensure ingredients are at room temperature for better mixing. Do not over-mix the batter; a few lumps are fine. Allow the cake to cool completely before frosting to prevent melting.
