Ingredients
  

Cherry Filling

  • 10 oz jar maraschino cherries, drained and finely chopped
  • 2 cups powdered sugar
  • 1/2 cup unsalted butter, softened
  • 1 teaspoon vanilla extract

Chocolate Coating

  • 1 cup semisweet chocolate chips
  • 1 cup milk chocolate chips
  • 1/2 cup creamy peanut butter
  • 1 cup chopped peanuts

Instructions
 

Preparation

  • In a large mixing bowl, beat the softened butter until creamy and smooth.
  • Gradually add the powdered sugar, mixing until combined.
  • Stir in the finely chopped maraschino cherries and vanilla extract.
  • Roll the cherry mixture into 1-inch balls and place them on a parchment-lined baking sheet.
  • Freeze the balls for at least one hour to firm up.

Making the Chocolate Coating

  • In a microwave-safe bowl, combine semisweet chocolate chips, milk chocolate chips, and creamy peanut butter.
  • Heat in 30-second intervals, stirring after each, until the mixture is smooth.
  • Stir in the chopped peanuts.

Coating the Truffles

  • Using a fork or toothpick, dip each frozen cherry ball into the melted chocolate mixture, coating it fully.
  • Return coated truffles to the parchment-lined baking sheet.

Setting and Serving

  • Refrigerate the truffles for at least 30 minutes to set the chocolate.
  • Store in an airtight container in the refrigerator until ready to serve.

Notes

For an extra layer of flavor, add a pinch of sea salt to the chocolate. Consider a splash of cherry-flavored liqueur or use dark chocolate for a deeper flavor. Store in the refrigerator for up to two weeks or freeze for up to three months.
