Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine the all-purpose flour, chilled cubed butter, and powdered sugar. Mix until crumbly.
  • Press the mixture firmly into the bottom of a greased 8x8-inch baking dish.

Baking

  • Bake the crust for about 15-20 minutes until golden brown.
  • Remove from oven and let it cool completely.

Topping

  • While the crust cools, whisk the heavy cream, sugar, and vanilla extract until soft peaks form.
  • Once the crust is cool, spread the cherry preserves evenly over the crust.
  • Layer the whipped cream over the cherry preserves, smoothing it out.
  • Sprinkle chopped pistachios over the whipped cream.

Chilling

  • Refrigerate the dessert for at least one hour before serving.

Notes

Use chilled butter and cream for the best texture. Consider using fresh cherries when in season for a natural sweetness.
