  • 1 can (10-ounce) diced tomatoes with chilies, undrained Infuses dish with flavor.
  • 1.5 cups chicken broth Keeps everything moist during baking.
  • 1 packet (1.12-ounce) fajita seasoning Provides the characteristic fajita kick.
  • 1 package (8-ounce) shredded Mexican blend cheese Goes on top for a melty finish.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  • In a large bowl, combine the shredded chicken, instant rice, cream of chicken soup, sour cream, diced onion and bell pepper blend, diced tomatoes with chilies, chicken broth, and fajita seasoning. Mix well.
  • Transfer the mixture to the prepared baking dish and spread evenly.
  • Top with shredded Mexican blend cheese, spreading it evenly over the casserole.
  • Cover the dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes or until the cheese is bubbly and golden.
  • Let the casserole rest for 5 minutes before serving.

Notes

Use Rotisserie Chicken for quicker prep; customize with more veggies like zucchini or corn; add jalapeños for added heat. Pair with warm tortillas or a fresh salad.
