Preparation

  • Begin by slicing the avocados in half, removing the pit, and using a spoon to scoop out the flesh. Cut the avocados into thin slices, approximately 1 cm thick.
  • Squeeze the juice of half a lemon over the avocado slices. This not only infuses a tangy flavor but also helps prevent the avocado from browning. Season the slices lightly with salt and black pepper to enhance their natural flavor.
  • In a shallow bowl, combine almond flour (or breadcrumbs), grated Parmesan cheese (if using), garlic powder, salt, and black pepper. Mix well to create an even coating mixture.
  • In another bowl, beat the egg until it’s smooth. Dip each avocado slice first into the beaten egg, ensuring it’s fully coated, then dredge it in the almond flour mixture, pressing lightly to help the coating adhere.

Baking

  • Preheat your oven to 200°C (392°F) and lightly grease a baking sheet with olive oil. Arrange the coated avocado slices in a single layer on the baking sheet, making sure to leave space between each slice for optimal crispiness. Drizzle a little olive oil over the top of each chip for extra flavor.
  • Bake the avocado slices in the preheated oven for about 15 to 20 minutes, or until they turn golden brown and crispy. Halfway through, gently flip the slices to ensure they become evenly crispy on both sides.

Serving

  • Once baked, remove the chips from the oven and allow them to cool for a few minutes. Serve them up with your favorite dip, whether it’s a creamy yogurt sauce or a spicy salsa.

Notes

For crispiest results, ensure the avocado slices are not too thick. Using a wire rack can help enhance crispness. Experiment with spices like paprika or chili powder for added flavor.
