Preparation

  • Preheat your oven to 400°F (200°C).
  • Line two baking sheets with parchment paper or silicone mats.

  • Add the eggs and vanilla extract, beating until just combined.
  • Slowly add the flour, baking powder, baking soda, and salt. Mix until just combined.
  • Gently fold in the quick oats.
  • Stir in the chocolate chips, chopped pecans, and coconut flakes until evenly distributed.
  • Roll the dough into 12 large balls, placing 6 on each baking sheet.

Baking

  • Bake in the preheated oven for 10-12 minutes or until the tops are golden brown.
  • Allow the cookies to cool on the pan for about 15 minutes before transferring them to a wire rack to cool completely.

Notes

For extra flavor, consider refrigerating your dough for at least 30 minutes before rolling. You can substitute pecans with walnuts or almonds if desired.
