Instructions
 

Cooking the Pasta

  • In a large pot of salted boiling water, add the fettuccine or linguine. Cook until al dente, following package instructions, usually around 8-10 minutes. Drain and set aside, reserving a bit of pasta water.

Sautéing the Shrimp

  • While the pasta cooks, heat the olive oil in a large skillet over medium heat. Once hot, add the shrimp. Cook for 1–2 minutes per side until they turn pink and juicy. Be careful not to overcook them!

Adding Aromatics

  • To the shrimp, add the minced garlic, lime zest, and red pepper flakes (if using). Sauté everything together for another 30 seconds, allowing the garlic to become fragrant without burning.

Combining Ingredients

  • Add the cooked pasta directly to the skillet with the shrimp and mix well. Pour in the fresh lime juice, chopped cilantro, and butter (if using). Toss everything together, adding a splash of the reserved pasta water if needed to create a light sauce.

Plating and Garnishing

  • Serve the pasta in bowls, garnished with lime wedges and a sprinkle of cilantro for that extra touch of freshness.

Notes

For an elevated experience, consider marinating the shrimp in lime juice and garlic for 15 minutes before cooking. You can also add cherry tomatoes or spinach to the sauté in the skillet for extra texture.
