Preparation

  • Cream together the softened butter and granulated sugar in a mixing bowl until light and fluffy.
  • Add eggs one at a time, mixing well after each addition.
  • Stir in the vanilla extract.
  • In a separate bowl, whisk together the flour, baking powder, and salt.
  • Gradually mix the dry ingredients into the butter mixture until a soft dough forms.
  • Cover the dough and chill it in the refrigerator for at least 30 minutes.

Make the Filling

  • In a small bowl, beat together softened cream cheese, 1/4 cup granulated sugar, and 1 tablespoon vanilla extract until smooth and creamy.

Assemble the Bites

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Scoop tablespoon-sized portions of the chilled dough, slightly flatten each portion, and place a small dollop of the cheesecake filling in the center.
  • Carefully wrap the dough around the filling and roll it into a smooth ball.

Coat and Bake

  • In a shallow dish, combine granulated sugar and ground cinnamon to create a coating.
  • Roll each dough ball gently in the mixture until fully coated.
  • Place the coated dough balls on the prepared baking sheet and bake for 12–15 minutes until golden brown.
  • Let them cool slightly before serving.
