  • 1 lb potato gnocchi Pillowy and tender.
  • 1 tbsp olive oil For cooking.
  • 1 tbsp unsalted butter For cooking.

Main Ingredients

  • 1 lb large shrimp, peeled and deveined Juicy and delicious.
  • 4 cloves garlic, minced Adds flavor.
  • 1/2 cup sun-dried tomatoes, chopped Enhances the flavor.
  • 1 cup heavy cream Provides creaminess.
  • 1/2 cup Parmesan cheese, grated For a cheesy taste.
  • 2 cups fresh baby spinach Adds color and nutrition.
  • salt and pepper, to taste For seasoning.
  • red pepper flakes, optional For a hint of heat.

Garnish

  • fresh basil leaves, torn Adds an aromatic touch.
  • extra Parmesan, for serving Optional garnish.

Instructions
 

Preparation

  • Boil gnocchi in salted water until they float, usually about 2-3 minutes. Drain and set aside.

Cooking

  • In a large skillet, melt the butter and olive oil over medium heat. Add the shrimp and cook for about 2-3 minutes on each side until pink and opaque.
  • Add the minced garlic and chopped sun-dried tomatoes, sauté until fragrant, about 1 minute.
  • Pour in the heavy cream and stir in the grated Parmesan cheese. Allow to simmer gently to create a rich sauce.
  • Add the fresh spinach and gnocchi to the skillet, stirring gently until the spinach wilts and the gnocchi is coated in the sauce.
  • Garnish with torn basil leaves, extra Parmesan, and red pepper flakes if desired. Serve hot.

Notes

For a creamier texture, substitute half of the heavy cream with cream cheese. Avoid overcooking the shrimp to prevent toughness. A dash of lemon juice can brighten the flavors.
