For frying

For the onion rings

  • 2 large onions, sliced into thick rings Form the basis of our crispy onion rings.
  • 1 cup all-purpose flour (for onion rings) Essential for the perfect coating.
  • 1/2 cup cornstarch (for onion rings) Ensures crispiness.

For the fries

  • 4 large russet potatoes, cut into fries Soak up seasoning beautifully.

Instructions
 

Prepare the Fries

  • Soak the cut potatoes in cold water for about 30 minutes to remove excess starch.
  • Drain the potatoes, pat them dry with paper towels, and fry them in hot oil at 350°F for 3-4 minutes until slightly golden.
  • Set the fries aside.

Make the Batter for Cod and Onion Rings

  • In two separate bowls, combine the dry ingredients for both the cod and the onion rings.
  • Gradually whisk in the cold soda water or beer until the batter reaches a smooth, slightly thick consistency.

Fry the Onion Rings

  • Dip thick onion slices into the batter, allowing excess to drip off.
  • Lower the battered rings into hot oil at 350°F and fry for 2-3 minutes until golden brown.
  • Drain the onion rings on paper towels.

Fry the Cod

  • Pat the cod fillets dry, dip into the batter, and fry in hot oil for 4-5 minutes, turning once.
  • Drain the cooked cod on paper towels.

Finish the Fries

  • Increase oil temperature to 375°F and fry the potatoes for another 2-3 minutes until crispy.
  • Sprinkle with salt immediately after frying.

Assemble and Serve

  • Plate the battered cod, crispy onion rings, and golden fries together.
  • Serve hot with tartar sauce, fresh lemon wedges, or malt vinegar.

Notes

Ensure oil is hot enough before frying each component. Letting the batter rest for fluffiness is recommended. Experiment with spices for additional flavor.
