  • 1/2 teaspoon onion powder Adds sweetness and depth.
  • 1 piece egg Binds the batter.
  • 1 cup cold water (or club soda) Use club soda for extra crispiness.

Preparation

  • In a large bowl, whisk together flour, cornstarch, baking powder, salt, black pepper, paprika, garlic powder, and onion powder.
  • In a separate bowl, beat the egg, then whisk in cold water or club soda.
  • Gradually add the wet ingredients to the dry ingredients, stirring until a smooth batter forms.
  • In a deep frying pan or pot, heat vegetable oil to 350°F.

Cooking

  • Pat the fish fillets dry with paper towels.
  • Dip each fillet into the batter, ensuring it's fully coated.
  • Carefully lower the fish into the hot oil and fry for 4-5 minutes per side or until golden brown and crispy.
  • Remove from the oil and drain on a wire rack or paper towels.
  • Serve hot with tartar sauce, lemon wedges, or your favorite dipping sauce.
