Ingredients
  

For the choux pastry

  • 1 cup water refreshing and pure
  • 1/2 cup unsalted butter creamy and rich
  • 1 tablespoon granulated sugar sweet and inviting
  • 1/4 teaspoon salt balancing flavor
  • 1 cup all-purpose flour soft and versatile
  • 4 large eggs golden and nutritious

For the pastry cream

  • 2 cups whole milk luxuriously creamy
  • 1/2 cup granulated sugar adding sweetness
  • 1/4 cup cornstarch for thickening
  • 1/4 teaspoon salt enhancing the flavors
  • 4 large egg yolks rich and velvety
  • 2 teaspoons vanilla extract fragrant and aromatic
  • 2 tablespoons unsalted butter for extra creaminess

For the chocolate glaze

  • 1 cup semi-sweet chocolate chips rich and decadent
  • 1/2 cup heavy cream silky and sumptuous

Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • In a medium-sized saucepan, combine the water, butter, sugar, and salt. Bring to a gentle boil.
  • Once boiling, remove from heat and stir in the flour until a cohesive ball of dough forms.
  • Allow the dough to cool for a couple of minutes then beat in the eggs one at a time.
  • Using a piping bag, pipe strips of dough onto the prepared baking sheet, leaving space between each.

Baking the Eclairs

  • Bake in the preheated oven for about 20-25 minutes until golden brown and puffed.
  • Turn off the oven and let the eclairs cool with the door ajar.

Making the Pastry Cream

  • In a saucepan, combine milk, sugar, cornstarch, and salt; stir over medium heat until simmering.
  • In a separate bowl, whisk the egg yolks and temper by gradually adding the hot milk mixture.
  • Return the yolk mixture to the saucepan, cooking while stirring until thickened.
  • Remove from heat, add vanilla extract and butter, stirring until creamy. Transfer to a piping bag.

Preparing the Chocolate Glaze

  • Heat the cream in a small saucepan until it just begins to simmer.
  • Pour over the chocolate chips and stir until smooth and glossy.

Assembly

  • Fill each cooled eclair with pastry cream until plump.
  • Dip each filled eclair into the chocolate glaze and let excess drip off.

Notes

To keep eclairs fresh, fill shortly before serving. Store leftovers in an airtight container for 2-3 days.
