For the Gravy

  • 3 tablespoons butter For making the roux
  • 3 tablespoons flour For thickening the gravy

Instructions
 

Prepare the Mashed Potatoes

  • Place potatoes in a large pot of salted water. Bring to a boil and cook until tender, about 15-20 minutes.
  • Drain and return to the pot. Mash the potatoes with milk, butter, salt, and pepper.
  • Add sour cream if desired for extra creaminess. Keep warm.

Cook the Chicken

  • Season chicken breasts with salt, pepper, and garlic powder.
  • In a skillet, melt 3 tablespoons of butter over medium heat. Add chicken and cook until golden and fully cooked, about 6-7 minutes per side.
  • Remove from the skillet and set aside.

Make the Gravy

  • In the same skillet, sprinkle flour over the butter and whisk continuously to create a roux. Cook for 1-2 minutes.
  • Gradually add chicken broth while whisking to avoid lumps.
  • Add seasonings: salt, pepper, oregano, thyme, paprika, onion powder, and garlic powder.
  • Cook until the gravy thickens, about 5 minutes.

Combine and Serve

  • Slice or shred the chicken and return it to the skillet, coating it with gravy.
  • Serve the chicken and gravy over a bed of mashed potatoes.

Notes

For an even richer flavor, consider marinating the chicken in buttermilk before cooking. A pinch of cayenne pepper can add a kick. Adding sautéed mushrooms or onions to the gravy enhances the texture and flavor.
