Ingredients
  

For the crust

For the cheesecake filling

  • 1 tsp vanilla extract Adds depth and richness.
  • 3 large eggs Binds the cheesecake together.
  • 1 cup sour cream Enhances creaminess.
  • 8 oz white chocolate, melted and slightly cooled Adds sweetness and luxury.
  • 4 oz white chocolate, chopped Adds texture to the filling.

For the ganache

  • 1/4 cup heavy cream Provides a velvety finish.

Preparation

  • Preheat your oven to 325°F (163°C) and grease a 9-inch springform pan.
  • In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter until it resembles wet sand.
  • Press this mixture firmly into the bottom of the pan to create an even layer.
  • Bake for about 10 minutes to set the crust, then let it cool.

Make the raspberry sauce

  • Combine raspberries, sugar, and lemon juice in a saucepan over medium heat.
  • Cook until raspberries break down and become aromatic.
  • Stir in cornstarch mixture until sauce thickens, then strain through a sieve.
  • Allow it to cool.

Prepare the cheesecake filling

  • In a mixing bowl, beat softened cream cheese until smooth.
  • Gradually add sugar and vanilla, beating until combined.
  • Add eggs one at a time, mixing well after each addition.
  • Mix in sour cream, and gently fold in melted white chocolate.

Assemble the cheesecake

  • Pour half of the cheesecake filling over the cooled crust.
  • Drizzle half of the raspberry sauce on top, using a knife to create swirls.
  • Pour in the remaining filling, topping with the rest of the raspberry sauce and swirl again.

Bake and chill

  • Bake cheesecake for 60-70 minutes until the center is set yet slightly jiggly.
  • Turn off the oven and let the cheesecake cool inside with the door slightly ajar for 1 hour.
  • Transfer the cheesecake to the fridge and chill for at least 4 hours, preferably overnight.

Make the ganache and serve

  • Heat heavy cream until steaming and pour it over chopped white chocolate.
  • Stir until smooth and allow to cool slightly.
  • Pour ganache over the cheesecake, letting it cascade down the sides.
  • Slice and serve chilled.

Notes

To avoid cracks, mix the batter just until combined and allow cooling gradually in the oven. For a lighter version, consider low-fat cream cheese and Greek yogurt. Can substitute raspberries with other fruits.
