  • 1/2 cup peanut butter Creamy
  • 1 cup coconut milk Luxurious and rich
  • 2 tablespoons soy sauce Savory flavor
  • 2 tablespoons lime juice Fresh
  • 1 tablespoon honey To balance spice
  • 1-2 tablespoons sriracha To taste
  • 1 teaspoon grated ginger
  • 1/4 teaspoon red pepper flakes For garnish

  • 2 cups jasmine rice Steamed

Instructions
 

Preparing the Chicken

  • Season the chicken breasts with salt and pepper.
  • Heat olive oil in a skillet over medium heat.
  • Sear the chicken breasts for 6-7 minutes on each side until fully cooked.
  • Remove the chicken from the skillet and let it rest before slicing.

Making the Sauce

  • In a saucepan, combine peanut butter, coconut milk, soy sauce, lime juice, honey, ginger, and sriracha.
  • Bring the mixture to a gentle simmer until thickened.

Assembling the Dish

  • Plate jasmine rice as the base.
  • Top with sliced chicken and drizzle with peanut sauce.
  • Garnish with red pepper flakes and fresh cilantro.

Notes

For lighter options, use chicken thighs or tofu. Adjust the spice level by varying the amount of sriracha.
