  • 1 tsp fish sauce (optional) A little goes a long way for an authentic taste.
  • 1/2 tsp sugar Balancing the heat and adding subtle sweetness.

  • Heat the oil in a pot over medium heat. Add minced garlic and grated ginger, and sauté briefly for about 1 minute, until aromatic.
  • Stir in the soy sauce, sriracha, optional fish sauce, sugar, and broth. Bring the mixture to a gentle simmer.
  • Add the sliced smoked sausage to the broth and cook for 5–6 minutes.
  • Drop in the ramen noodles and cook for 3–4 minutes, stirring occasionally until they become tender.
  • In the last 2 minutes of cooking, gently add the shrimp to the pot and cook until they turn pink.
  • Once cooked, divide the hot contents into bowls and ladle the broth over the noodles and proteins.
  • Garnish each bowl with halved hard-boiled eggs, fresh jalapeños, chopped scallions, and a sprinkle of parsley or cilantro.
  • For an extra kick, drizzle some chili oil on top before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat gently on the stovetop. Variations include using turkey or chicken sausage, adding vegetables, or substituting tofu for a vegetarian option.
