Ingredients
  

Main Ingredients

  • 1 lb boneless chicken breast or thighs, cubed Use chicken breast or thighs based on preference.
  • 8 oz lo mein noodles or spaghetti Spaghetti can be used as a substitute.
  • 1 tbsp sesame oil or vegetable oil For cooking and flavoring.

Vegetables

  • 2 cups broccoli florets
  • 1 cup sliced mushrooms
  • 1 medium julienned carrot
  • 1 cup chopped cabbage
  • 3 stalks sliced green onions
  • 4 cloves minced garlic For flavoring.

Seasoning and Sauce

  • 1 tbsp soy sauce For seasoning the chicken.
  • 1/4 cup low-sodium soy sauce For the sauce.
  • 2 tbsp oyster sauce
  • 1 tbsp hoisin sauce
  • 1 tbsp brown sugar
  • 1 tsp cornstarch Mixed with 2 tbsp water to make a slurry.
  • 1 tsp sriracha Optional for heat.

Instructions
 

Preparation

  • Boil the lo mein noodles until al dente, then rinse under cold water to stop cooking and remove excess starch. Drizzle with sesame oil.
  • Heat a large skillet or wok over medium-high heat, then add sesame oil. Once shimmering, add the chicken cubes and sear until browned (about 5-7 minutes).

Cooking

  • Add minced garlic and mushrooms to the skillet, sautéing until fragrant.
  • Add broccoli, julienned carrot, and chopped cabbage. Stir-fry until crisp-tender (about 4-5 minutes).
  • In a bowl, whisk together soy sauce, oyster sauce, hoisin sauce, brown sugar, and cornstarch slurry. Pour over chicken and vegetables in the skillet.
  • Toss the cooked noodles into the skillet with the chicken and vegetables, adding sliced green onions. Mix until coated in the sauce.
  • Serve hot, and enjoy!

Notes

For an authentic touch, consider adding rice vinegar to the sauce. You can also use seasonal vegetables or leftover chicken/tofu.
