Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C).
  • Toss the sweet potato rounds with olive oil, smoked paprika, salt, and pepper. Spread them out on a baking sheet.

Roasting

  • Roast the sweet potatoes for 25–30 minutes until they are golden and caramelized.
  • While the sweet potatoes are roasting, prepare your broccoli by tossing the florets in olive oil and seasoning them lightly.
  • Roast the broccoli alongside the potatoes for about 15–18 minutes, or steam for 6–7 minutes if a softer texture is preferred.

Cooking the Steak

  • Pat the ribeye or strip steak dry with paper towels and season it generously with salt and cracked black pepper.
  • In a skillet over high heat, heat the olive oil and sear the steak for 3–4 minutes on each side for a perfect medium rare.
  • Let the steak rest for 5 minutes before slicing to allow the juices to redistribute.

Making the Garlic Herb Butter

  • In the same skillet, melt butter over low heat, then add minced garlic and chopped parsley. Stir until fragrant, about 1 minute.

Serving

  • Plate the sliced steak and drizzle the garlic herb butter on top.
