Garlic Herb Lamb Chops and Loaded Baked Potato

Ingredients
  

For the Lamb Chops

  • 8 pieces lamb loin chops succulent and juicy
  • 2 tbsp olive oil fragrant and healthy
  • 4 cloves garlic minced for that aromatic punch
  • 1 tbsp fresh parsley finely chopped for freshness
  • 1 tsp fresh rosemary chopped to enhance flavor
  • 1/2 tsp dried thyme providing earthy notes
  • Salt & freshly cracked black pepper to taste
  • 1 tbsp butter for finishing, adding richness

For the Loaded Baked Potatoes

  • 4 large russet potatoes fluffy and hearty
  • 2 tbsp butter creamy decadence
  • 1/2 cup shredded cheddar cheese melty and delicious
  • 1/4 cup sour cream optional, for a tangy element
  • Salt & pepper to taste
  • 3 cups broccoli florets vibrant and nutritious
  • 1 tbsp olive oil for roasting
  • Salt & pepper for seasoning the broccoli

Instructions
 

Prep & Bake the Potatoes

  • Preheat your oven to 400°F (200°C). Pierce the russet potatoes several times with a fork. Rub them with olive oil and sprinkle with salt. Bake for 50–60 minutes or until tender.

Season the Lamb Chops

  • Pat the lamb chops dry and rub with remaining olive oil, garlic, parsley, rosemary, thyme, salt, and pepper. Let sit for about 15 minutes.

Sear to Perfection

  • Heat a skillet over medium-high heat. Sear the lamb chops for 3–4 minutes on each side. In the last minute, add butter and spoon over the chops.

Roast the Broccoli

  • Toss broccoli florets with olive oil, salt, and pepper. Spread on a baking tray and roast at 400°F for 15–20 minutes.

Load & Plate

  • Once potatoes are done, split them open and fluff with butter. Top with cheddar cheese and sour cream. Serve with lamb chops and roasted broccoli.

Notes

For best flavor, marinate lamb chops for a few hours or overnight. You can add a pinch of red pepper flakes to the seasoning for spice. Use russet potatoes for a fluffy interior.
