  • 1 tablespoon unsalted butter Adds a rich creaminess to the dough.
  • 1 teaspoon yeast Helps the bread rise.
  • 1 teaspoon honey Offers a touch of natural sweetness.
  • 2 cups warm water Heated to a warm 100-110°F to activate the yeast.
  • 1 bulb garlic Roasted for a delightful flavor.
  • 2 red onions sliced Enhances sweetness and depth through caramelization.
  • to taste salt salt Essential seasoning.

Preparation

  • Preheat your oven to 350°F. Wrap the garlic bulb in aluminum foil and roast it in the center of the oven for about 45 minutes until soft and aromatic.
  • While the garlic roasts, heat a medium saucepan over medium heat. Add sliced red onions, butter, and 1 teaspoon of salt. Cook for approximately 30 minutes, stirring occasionally, until beautifully caramelized.
  • Once the garlic is cool to the touch, peel the skins off each clove and place the roasted cloves into a small bowl.
  • In a stand mixer, add the yeast to the bowl with warm water and honey to bloom for about 5 minutes until foamy.
  • Add 1 teaspoon of salt and the flour to the yeast mixture, mixing on low speed for around 2 minutes until well combined.
  • Add the roasted garlic and caramelized onions to the dough. Mix on low speed for an additional 2 minutes, then increase to medium speed and mix for 5 more minutes until the dough is smooth and elastic.
  • Transfer your dough to a large oven-safe pot with a lid. Cover it with the lid and place it in a preheated oven at 480°F. Bake for 30 minutes.

Notes

Consider drizzling olive oil over the garlic while roasting for intensified flavor. Let dough rise in a warm area for best results. Fresh herbs like rosemary or thyme can be added for extra flavor.
