  • 0.5 cup breadcrumbs For texture

  • 0.25 cup milk
  • 2 tbsp fresh parsley For flavor

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
  • In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, shredded mozzarella, minced garlic, egg, milk, parsley, Italian seasoning, salt, and black pepper. Mix until just combined.
  • Shape the mixture into a loaf on the prepared baking sheet or press it into the loaf pan.

Baking

  • Bake for 35-40 minutes, or until cooked through and firm.
  • Remove the meatloaf from the oven and sprinkle extra shredded mozzarella over the top.
  • Return to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.

Serving

  • Let the meatloaf rest for 5 minutes before slicing. Garnish with fresh parsley and serve with your favorite sides.

Notes

For enhanced flavor, consider adding sautéed onions or bell peppers. A dash of red pepper flakes or smoked paprika can spice things up. Use a meat thermometer to ensure the internal temperature reaches 165°F (74°C).
