For the Sauce

  • 1 can coconut milk (400ml) Provides signature richness.
  • 1 tbsp vegetable oil Used for browning meatballs and sautéing.
  • 1 red bell pepper, sliced Adds color and crunch.
  • 1/2 cup fresh spinach Adds color and healthy component.

For Serving

  • 2 cups cooked jasmine rice Fluffy base for the dish.
  • 1 lime, juiced Spritz of freshness.

Preparation

  • In a mixing bowl, combine the chicken mince, egg, breadcrumbs, chopped coriander, fresh mint, grated ginger, minced garlic, fish sauce, curry powder, and a pinch of salt and pepper. Mix until well combined, then shape into meatballs about 2.5 cm in diameter.

Cooking the Meatballs

  • Heat the vegetable oil in a large pan over medium heat. Add the meatballs in batches and cook them for about 7-8 minutes, turning occasionally until golden brown. Remove from the pan and set aside.

Making the Sauce

  • In the same pan, add more oil if necessary and sauté the chopped onion for 3-4 minutes until softened. Stir in the red curry paste and grated ginger, cooking for 2 minutes.
  • Pour in the coconut milk, fish sauce, and sugar. Bring to a gentle simmer, then add the sliced red bell pepper and cook for an additional 5 minutes.

Finishing Touches

  • Return the meatballs to the pan and let them simmer in the sauce for about 10 minutes, stirring in lime juice and fresh spinach just before serving.
  • Serve over jasmine rice, garnished with cilantro, Thai basil, and lime wedges.

Notes

To enhance flavors, consider adding coconut aminos or adjusting heat level with more curry paste. Including snap peas or carrots can also add color and nutrition.
