Tzatziki Ingredients

  • 1 tablespoon chopped fresh dill Enhances the tzatziki beautifully.

Instructions
 

Marinate the Chicken

  • In a medium bowl, combine the olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper. Whisk together until well-combined.
  • Add the chicken breasts, ensuring they are evenly coated with the marinade. Let them sit for at least 20 minutes or overnight in the refrigerator.

Prepare the Grill

  • Preheat your grill or skillet to medium-high heat.

Cook the Chicken

  • Once your grill/skillet is ready, place the marinated chicken on and cook for about 6–7 minutes per side until golden brown and cooked through.
  • Remove from heat and allow to rest for a few minutes before slicing thinly.

Make the Tzatziki Sauce

  • In a separate bowl, mix together the Greek yogurt, grated cucumber (squeezed for moisture), minced garlic, chopped dill, lemon juice, and a pinch of salt.
  • Stir well and refrigerate until ready to use.

Assemble the Salad

  • In a large serving bowl, layer the chopped romaine lettuce, halved cherry tomatoes, sliced cucumber, and thinly sliced red onion.
  • Top with the sliced grilled chicken.

Serve with Tzatziki
