  • 2 medium potatoes Diced, providing a hearty texture
  • 1 cup mushrooms Sliced, earthy and umami-rich
  • 1 piece bell pepper Sliced, adding a vibrant crunch
  • 1/4 cup olive oil Golden and fragrant, key for both flavor and cooking
  • 1 tablespoon herb mixture (parsley, thyme, oregano) Fresh and aromatic
  • to taste salt and pepper Enhancing all the delicious flavors in your dish

Instructions
 

Preparation

  • Preheat your grill to medium-high heat.
  • Season your chicken breasts liberally with olive oil, herb mixture, salt, and pepper.
  • Place the chicken on the grill and cook for 6-7 minutes on each side or until the juices run clear.
  • In a pot, boil water and add your diced potatoes. Let them cook for about 10 minutes until tender, then drain the water.
  • Toss the cooked potatoes in a splash of olive oil, salt, and pepper.

Cooking

  • Spread the seasoned potatoes on a baking sheet and roast them in the oven at 425°F (220°C) for 15-20 minutes.
  • In a sauté pan over medium heat, add a dash of olive oil and sauté the sliced mushrooms and bell peppers until soft.

Assembly

  • In a bowl, layer your fluffy cooked rice at the bottom, followed by the grilled chicken sliced into strips, the sautéed vegetables, and the crispy roasted potatoes.
  • Drizzle with an extra bit of herb sauce if desired. Serve hot and enjoy!

Notes

For a healthier twist, consider swapping white rice for brown rice or quinoa. Customize bowls with avocado slices, feta cheese, or chopped nuts for extra flavor and texture.
