Roasted Carrots

Creamy Mustard Sauce

  • 1/2 cup mayonnaise For a creamy base.
  • 1/4 cup sour cream Adds tanginess and richness.
  • 1 tablespoon Dijon mustard Provides a zesty and bold flavor.
  • 1 tablespoon chopped parsley For a fresh, herbaceous note.
  • 1/4 teaspoon black pepper (for sauce) Balances the flavors.

Instructions
 

Preparation

  • In a bowl, toss the beef cubes with olive oil, paprika, garlic powder, salt, black pepper, and cayenne pepper (if you like a bit of heat). Make sure everything is well-coated.
  • In another bowl, mix the carrot pieces with olive oil, salt, black pepper, and paprika. Stir until the carrots are nicely coated with the seasonings.

Cooking

  • Preheat your oven to 400°F (200°C). Spread the seasoned carrots evenly on a baking sheet and roast for 20-25 minutes, or until they’re tender and starting to caramelize. Toss them halfway through cooking for an even roast.
  • While the carrots are roasting, heat your grill to medium-high heat. Grill the marinated steak cubes for 2-3 minutes on each side, or until they’re cooked to your liking. Once done, let the steak rest for a minute before serving.

Sauce Preparation

  • In a small bowl, whisk together the mayonnaise, sour cream, Dijon mustard, parsley, garlic, salt, and black pepper until smooth and well combined.

Assembly

  • On a serving platter, arrange the roasted carrots and top them with the grilled steak bites. Drizzle the creamy mustard sauce generously over the steak and carrots.

Notes

Consider marinating the beef for a few hours or overnight for deeper flavor. Experiment with different herbs and spices in the sauce, such as fresh dill or thyme. A splash of lemon juice can brighten the dish.
