Preparation

  • Gradually add the dry ingredients to the wet, mixing until just combined.
  • Fold in the shredded coconut.

Baking

  • Pour the mixture into a greased 9x5-inch loaf pan.
  • Bake for about 60 minutes, or until a toothpick inserted into the center comes out clean.
