Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease and flour a 9x13 inch baking dish.
  • In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  • In another large bowl, combine the granulated sugar, brown sugar, and vegetable oil until blended.
  • Gradually add in the eggs, one at a time, beating well after each addition, then stir in the vanilla extract.
  • Gradually add the flour mixture to the wet ingredients and mix just until incorporated.
  • Gently fold in the grated carrots, crushed pineapple, walnuts, and shredded coconut.

Baking

  • Pour the batter into the prepared baking dish and bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean.

Coconut Icing

  • In a mixing bowl, beat together softened butter and cream cheese until smooth.
  • Gradually add the powdered sugar and vanilla extract, mixing until velvety.
  • Stir in the shredded coconut.

Frosting

  • Allow the cake to cool completely before frosting with the coconut icing.

Notes
