Preparation

  • Begin by cooking the rice according to the package instructions, then keep it warm and fluffy for assembly later.
  • Season the chicken pieces with salt and pepper, then add them to a large skillet or wok with 1 tablespoon of sesame oil over medium-high heat.
  • Sear the chicken until it turns golden and is cooked through, about 5-6 minutes.
  • Add the minced garlic and fresh ginger to the skillet, sauté for around 30 seconds until fragrant.
  • Pour in the soy sauce, honey (or maple syrup), rice vinegar, and sesame oil, stirring well and bringing it to a simmer.
  • Mix the cornstarch slurry into the sauce and cook while stirring until it thickens, about 1-2 minutes.
  • In a separate pan, lightly sauté the broccoli, carrots, and bell pepper until crisp-tender, about 3-4 minutes.
  • To assemble, divide the cooked rice among four bowls, topping each with portions of the sautéed veggies and teriyaki chicken.
  • Finally, sprinkle with toasted sesame seeds and sliced scallions before serving.

Notes

Ensure you don’t overcrowd the pan when cooking chicken or veggies for even cooking. Adjust seasoning to match your taste and experiment with additional spices or ingredients.
