  • 1 can (16 oz) refried beans Creamy and rich, these beans provide a delicious layer of flavor.
  • 1 can (10 oz) red enchilada sauce A zesty sauce that adds depth and color to each pizza.
  • 1 cup shredded cheddar cheese Melty and sharp, this cheese provides a comforting gooeyness.
  • 1 cup shredded pepper-jack cheese Adds a spicy kick for those who like some heat.
  • 1 each Roma tomato, diced Juicy and fresh, adding a burst of color and brightness.
  • 1 each green onion, diced Offers a crunchy texture and a mild onion flavor.
  • 1 small can sliced black olives Salty and briny, perfect for garnish and flavor contrast.

Instructions
 

Preparation

  • Preheat your oven to 375°F and lightly spray two baking sheets with non-stick spray.
  • Arrange 3 tortillas on each sheet. Bake the tortillas for 3-5 minutes, flip them, then bake for another 2-5 minutes until golden and crispy. Set aside.
  • In a skillet, cook and crumble the ground beef over medium-high heat. Drain any excess grease.
  • Add taco seasoning and water to the beef, bringing it to a boil. Reduce heat and simmer for 10 minutes. Set aside.

Assembly

  • Warm the refried beans in a microwave-safe bowl. Spread a thin layer of beans over the first tortilla.
  • Top the beans with 1/3 of the meat mixture, then layer with another tortilla.
  • Spread 3 tablespoons of enchilada sauce on the top tortilla, then sprinkle with cheddar and pepper-jack cheese.
  • Add diced tomato, green onion, and sliced black olives.
  • Repeat the process with the remaining tortillas, creating 3 pizzas in total.

Cooking

  • Bake the pizzas for 5 minutes or until the cheese is melted and bubbly.
  • Let them cool slightly before slicing and serving.

Notes

To elevate the flavors, consider sautéing diced vegetables such as green peppers or jalapeños before layering them. Add chili powder or cumin for extra flavor. Serve with guacamole or sour cream on the side.
