Preparation

  • Preheat your oven to 375°F (190°C) and grease an 8x8 baking dish.

  • In another bowl, blend the mashed sweet potato with eggs, buttermilk, melted butter, honey, and vanilla extract.
  • Pour the wet mixture into the dry ingredients, stirring gently until just combined. Avoid overmixing.

Baking

  • Pour the batter into the prepared baking pan and bake for 28-32 minutes.
  • Check for doneness by inserting a toothpick into the center; it should come out clean. Let cool slightly before serving.

Notes
