Preparation

  • Begin by peeling the potatoes and cutting them into chunks. Place the potato pieces in a large pot of boiling water and cook until they are tender, about 15-20 minutes. Drain and cool.
  • In a large mixing bowl, mash the potatoes until smooth, ensuring there are no lumps.
  • Mix in the melted butter and a pinch of salt into the mashed potatoes until well incorporated.
  • Gradually add the plain flour, stirring gently until forming a soft dough; do not overwork.
  • Dust your work surface with a little flour, turn out the dough, and shape into a round, about 1 inch thick.
  • Cut the circle into quarters to create four triangular shapes (farls).

Cooking

  • Heat a mixture of extra butter and olive oil in a large skillet over medium heat.
  • Carefully add the farls and fry for 5-7 minutes on each side until golden brown.
  • Transfer the cooked farls to a paper towel-lined plate to absorb excess oil.

Serving

Notes

Consider adding herbs such as chives or scallions for extra flavor. Slightly pressing the farls for a thinner, crispier texture is another variation.
