Preparation

  • In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5-7 minutes, or until the vegetables are softened.
  • Add the minced garlic and cook for another minute.
  • Pour in the turkey or chicken broth and bring the mixture to a boil.
  • Add the dried thyme, dried parsley, and bay leaf.
  • Add the diced potatoes to the pot and reduce the heat to a simmer. Cook for about 10-15 minutes, or until the potatoes are tender.
  • Stir in the cooked turkey and frozen peas. Simmer for an additional 5 minutes until heated through.
  • Taste the soup and adjust the seasoning with salt and pepper as needed.
  • Remove the bay leaf before serving.
  • Ladle the Leftover Turkey Soup into bowls and garnish with fresh parsley if desired.

Notes

For an extra layer of flavor, sauté the vegetables on low heat to caramelize them slightly. Add a splash of lemon juice just before serving for brightness. For a creamier texture, stir in heavy cream before serving or substitute some broth with cream.
