Ingredients
  

For the crust

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt A pinch to enhance flavor
  • 1 cup cold, cubed unsalted butter Ensure butter is cold for best results

For the filling

  • 1 cup granulated sugar
  • 2 large eggs Bind the filling together
  • 1/4 cup all-purpose flour Thickens the filling
  • 1/3 cup freshly squeezed lemon juice About 2 lemons
  • 1 tablespoon lemon zest For aromatic zing

Instructions
 

Preparation

  • Preheat the oven to 175°C (350°F) and line an 8x8-inch baking pan with parchment paper.
  • In a mixing bowl, combine the flour, sugar, and salt for the crust.
  • Add the cold, cubed butter and mix until the mixture resembles coarse crumbs.
  • Reserve 1 cup of the crumb mixture for topping. Press the remaining mixture firmly into the bottom of the prepared baking pan.
  • Bake the crust for 15 minutes or until lightly golden. Let cool slightly.

Filling

  • In a separate bowl, whisk together the sugar, eggs, flour, lemon juice, and lemon zest until smooth.
  • Pour the lemon filling over the slightly cooled crust, spreading it evenly.
  • Sprinkle the reserved crumb mixture evenly over the filling.
  • Bake for 25-30 minutes or until the topping is golden and the filling has set.
  • Allow to cool completely before slicing into squares.
  • Optionally, dust with powdered sugar before serving.

Notes

To elevate the flavor, consider adding a touch of vanilla extract to the filling or experiment with different citrus juices.
