Instructions
 

Preparation

  • Heat olive oil in a large pot over medium heat.
  • Add onion, carrots, and celery. Cook for 5–7 minutes, until softened.
  • Stir in garlic, cumin, smoked paprika, and thyme. Cook for 1 minute until fragrant.

Cooking

  • Add lentils, diced tomatoes (with juice), vegetable broth, and water. Stir well.
  • Bring to a boil, then reduce heat to low. Cover and simmer for 25–30 minutes, or until lentils are tender.
  • Stir in spinach or kale. Cook for an additional 5 minutes until wilted.
  • Season with salt and pepper to taste. Serve hot with lemon wedges on the side.

Notes

Soaking lentils can shorten cooking time. Consider adding a bay leaf while simmering for extra flavor, and blend part of the soup for a creamier texture. Store in airtight containers for 4–5 days in the fridge or freeze for up to 3 months.
