Ingredients
  

For the Chicken and Rice Base

  • 2 pieces Grilled chicken breast, seasoned Seasoned with paprika, cumin, and garlic.
  • 1 cup Cooked rice Warm and fluffy base.

For the Salad Toppings

  • 1/2 cup Grape tomatoes, halved Adds a fresh burst of sweetness.
  • 1/2 cup Cucumber, sliced Crisp and refreshing.
  • 2 tbsp Feta crumbles Creamy and tangy.
  • 2 tbsp Diced avocado Enhances texture.
  • 1/4 cup Pickled red onion Adds a zesty crunch.

For the Sauce and Garnish

  • 1/2 cup Tzatziki sauce Creamy blend of yogurt, cucumber, and herbs.
  • 1 tbsp Fresh dill or parsley For garnish.

Instructions
 

Grilling the Chicken

  • Marinate the chicken breasts with paprika, cumin, garlic, salt, and pepper for about 15 minutes.
  • Preheat your grill or grill pan on medium-high heat and cook the chicken for about 6-7 minutes on each side.
  • Ensure the internal temperature reaches 165°F. Let it rest for 5 minutes before slicing thinly.

Preparing the Rice Base

  • Prepare your rice according to the package instructions. Fluff with a fork and set aside, adding a pinch of salt and a drizzle of olive oil.

Chopping Fresh Vegetables

  • Slice the cucumber and halve the grape tomatoes while the chicken is resting.

Assembling the Bowl

  • In a large bowl or individual serving bowls, start with the warm rice as the base.
  • Artfully arrange the sliced grilled chicken, tomatoes, cucumbers, feta, avocado, and pickled red onions on top.

Adding the Tzatziki

  • Generously dollop the tzatziki sauce over the top.

Garnishing and Serving

  • Finish with a sprinkle of fresh dill or parsley. Serve immediately.

Notes

Ensure the chicken is at room temperature before grilling for even cooking. Use day-old rice for best results. Serve with warm pita or a green salad for a complete meal.
