Instructions
 

Preparation

  • Place the chopped spinach in a microwave-safe bowl and microwave on high for 45 seconds until wilted.
  • Add mozzarella, feta, ricotta, sun-dried tomatoes, and olives to the wilted spinach, stirring until well combined.

Assembly and Cooking

  • Spread the cheese mixture evenly onto two slices of bread, then top with the remaining slices.
  • Butter the outer sides of each sandwich generously.
  • Heat a skillet over medium-low heat. Place the sandwiches in the skillet, buttered side down, and cook for 2-3 minutes per side until golden brown.
  • Press gently with a spatula for even grilling, allowing the cheese to melt.

Serving
