  • 1/2 cup sun-dried tomatoes (packed in oil), chopped For a tangy burst
  • 1/3 cup crumbled feta cheese Creamy and salty
  • 1/4 cup diced red onion Adding crunch and slight sweetness
  • 2 tablespoons basil pesto Bursting with aromatic flavors
  • 1 tablespoon olive oil Rich and smooth

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Place the salmon fillets skin-side down on the prepared baking sheet. Season each fillet with salt, pepper, and freshly squeezed lemon juice.
  • Spoon a dollop of basil pesto over each fillet.
  • Top the fillets with fresh spinach, sun-dried tomatoes, diced red onion, and crumbled feta cheese. Drizzle with olive oil.

Cooking

  • Bake in the preheated oven for 15-18 minutes, or until the salmon flakes easily when tested with a fork.
  • Garnish with fresh herbs, if desired, and serve.

Notes

Consider adding chili flakes for a spicy kick or substitute feta with goat cheese. Use fresh herbs like dill or parsley for added freshness.
