Preparation

  • Preheat the oven to 350°F (175°C). Grease a baking dish.
  • In a bowl, mix graham cracker crumbs, granulated sugar, and melted butter until combined. Press this mixture firmly into the bottom of the prepared baking dish.
  • Bake the crust for 10 minutes, then allow it to cool completely.
  • In a separate bowl, beat the cream cheese until smooth. Gradually add powdered sugar and vanilla extract, mixing until fully combined.
  • Gently fold in the whipped cream and mixed berries, being careful not to crush the berries.
  • Spread the cheesecake filling evenly over the cooled crust.
  • Refrigerate for at least 4 hours or until set.
  • Once set, cut into bars and serve.

Notes

Ensure cream cheese is softened for a smoother filling. Press the crust firmly to keep it together. Refrigerate thoroughly for the best results. Can be garnished with whipped cream or fresh berries before serving.
