Cooking the Mixture

  • In a medium saucepan, combine the granulated sugar, butter, and milk. Cook over medium heat, stirring constantly, until the mixture comes to a boil.
  • Once boiling, continue to cook for 1-2 minutes, or until the mixture reaches the soft ball stage (around 235-240°F or 113-115°C).
  • Remove the saucepan from heat. Stir in the peanut butter, vanilla extract, and a pinch of salt until smooth.

Combining Ingredients

  • Fold in the chopped pecans and shredded coconut, mixing until everything is well coated.
  • Drop spoonfuls of the mixture onto a parchment-lined baking sheet. Use a cookie scoop or two spoons.

Cooling and Setting

  • Allow the cookies to cool and set at room temperature for at least 30 minutes. Alternatively, refrigerate for 15-20 minutes.
