Instructions
Preparation
- In a medium bowl, mix the graham cracker crumbs and melted butter until well combined. Press firmly into the bottom of a 9x13 inch baking dish to form the crust.
- In a large mixing bowl, beat the cream cheese and powdered sugar together until smooth and creamy.
- In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until just combined.
- Spread half of the cream cheese mixture over the crust, then evenly distribute the crushed pineapple over it.
- Spread the remaining cream cheese mixture over the pineapple layer.
- Arrange the pineapple rings on top and garnish with fresh raspberries. Add dollops of whipped cream around the pineapple rings.
Chilling
- Refrigerate for at least 4 hours, or until set. Serving chilled is essential.
